I’m about 6 ft 2, but Palance really looked taller than his height.

Depending on the role, I think that was the plan by the producers and casting directors. Much like Tom Cruise who is kind of short, he usually only surrounds himself by people that are shorter and/or uses a bit of camera trickery to make himself seem taller.
